LEMON AND BITTER GROUT PICKLE 5TH RECIPE

   
                                   LEMON  AND BITTER GROUT  PICKLE



                   LEMON & BITTER  GOURD (KARELA) PICKLE 


     INGREDIENTS

 1    Lemon                                                 6 Nos

 2    Green Bitter Gourd                              1  No

 3     Mehti Powder roasted                         1 tsp
        in oil ( Fenugreek)

 4      Chilly Powder                                    2 tsp

 5      Hing Powder(Asoafoetida)                1/2 tsp

 6      Turmeric Powder                               1 tsp

  7     Salt                                                   2 tsp


     METHOD
"Cut the lemon into small pieces and slice the bitter gourd . Heat the oil in a pan and add the  Asoafoetida (Hing) powder. Turn off the flame and then add turmeric ,chilly powder  and  methi powder. Mix this with cut pieces of lemon and bitter gourd and add salt. Store in bottle for a week before use."

4th recipe Jeerawali (Cummin seeds) Mirachi

                            Jeerawali   Mirachi     

      Ingredients 

1   Kashmiri Green  Chillies              1/4 kg  (  OR  any small variety  )
                           
2   Roasted Jeera Powder                 25gms 

3   Rai Powder( Mustered)               25gms

4   Hing  Powder                              2 tsp

 5  Methi roasted and powdered        2 tsp

 6  Haldi ( Turmeric) powder            2 tsp

 7  Salt                                            25gms

 8   Oil                                            1/2 cup

 9   Lemon juice                               5 nos       

       Method

  1  Slit  chillies
   
  2  Heat oil and add 1tsp of Hing powder and 1tsp Haladi powder  to this add slit chillies , saute  
      for 5 min on low  flame  and keep lid  for 1 minute 
  3   Switch off gas and add  all ingredients mentioned above and balance Hing powder except lemon 
       juice  ..Mixed  gently 
  4   Add Lemon juice when mixture is at normal temperature  Again mixe  well and store in bottle

   This is  ready for serving immediately.

3rd recipe Lemon marmalade

                             

                                      Lemon  Marmalade

   Ingredients

  1  Lemon medium size                      4 Nos 

  2  Salt                                                1 tbs

  3   Red chili  powder                          A pinch

  4   Sugar                                             1/2 cup

  5    cinnamon  powder                        a pinch ( optional) 

   Method

   Cut lemon  into 8 pieces and remove seeds. Put pieces in mixer jar along with salt and grind it coarsely. Remove it from mixer jar and keep it in clean transparent  bottle. Close the lid properly and keep aside for 1 day and add  sugar  stir well. Use it after 2 days .

  Enjoy with steam rice and parathas.

MY SECOND RECIPE ONION CHUTNEY

  RECIPE   NO 2

                               ONION  CHUTNEY 


  Ingredients 

 1   Onion  medium size                    4 or 5 nos 

 2    Jaggery                                      1/4  cup pieces 

 3     Tamarind                                   One lemon size soaked in water 

 4     Salt & Chilly powder                   To taste

 5     For seasoning ( Tadka)
        Asafoetida(Hing)  Mustered seeds, cumin seeds(Jeera) 

     Method 

 Cut Onion into pieces, squeeze  tamarind which soaked in water earlier, To this add  cut Onion,Jaggery, 
 Salt ,chilly powder and grind it.
  For Seasoning (Tadaka)   heat oil in a pan  add  Mustered seeds , Jeera and  swtch off the gas and add hing
   This add to ground  onion and jaggery, tamarind paste  and  stir well
  This can be used with paratha , as a bread spread. But i enjoy most with curd rice and dahi  shavage(curd vermicelli).

RECIPE AND USEFUL TIPS Turmeric Dip Paste

This is my first attempt to create blog where i intended to share recipes and Herbal tips.
To start with ,
 RECIPE
                            Turmeric   Dip Paste

 Get raw  Turmeric which available in vegetable market & wash/dry.
 Grate turmeric and make a paste along with  yellow mustered seeds ( 2 Green chilies optional) 
  For 100gms of Turmeric  1 1/2 tsp of Mustered seeds +salt to taste+ 1 tbs of lamon juice
  Mix well and keep in clean dry air tight bottle.
  
  The above paste can be used as a dip with curd. It can be used without adding curd as chatani
   This is useful for blood purification and also good for skin
   I am sure you will try this will like it.
